Need to prepare for an event but want it to be fresh- does doing this the night before make any difference?

Not sure if this is the same but my dad cuts vegetables for me for lunch and they're totally fine the next day

As long as they have no dressing on them, you should be ok. Unless they're avocadoes.

Even the avocados my dad cut for me were not bad this morning actually it was like today at around 1:00 p.m..

They will lose some nutritional value but they'll be safe to eat.

You can definitely do this, an airtight container is the best way to pack them.

Store them separately in sealed containers or Ziplocs in the refrigerator. They stay bright and fresh. (Storing them mixed together, like cut tomatoes next to cut cucumbers, can make them start turning and become mushy.)

Try to keep them dry. If they're wet, they'll go bad faster.
