Non-Gebrokts Side Dish

I am having a guest for the seder who is gluten-free, necessitating a non-gebrokts meal (no matza ball soup Sad) Any suggestions for a side dish? I try to stay away from potato starch (but will use a small if necessary) and am already planning on having a salad and sweet potatoes.

You can make egg drops for your soup.
Or chicken mock knaidlach.
If you can get your hands on Tapioca starch, you can use that instead of potato starch for egg noodles.
Of course, you can always buy the non gebrokts mini soup croutons. They're actually really good.
How about quinoa?

I'll make chicken soup and just forgive the matza balls (there's the 2nd seder for that anyway).

Quinoa is a great idea - do you have a good recipe?

Roasted vegetables - potatoes, carrots, eggplant, peppers, onions, squash, whatever. Sprinke with salt, pepper, garlic, and a bit of olive oil. Roast at 450 for about 45 minutes. Not bad cold either.

What about good old-fashioned potato kugel? Zucchini kugel? Kohlrabi kugel? Apple Kugel? Two-tone carrot-zucchini kugel? (Okay, that does it for my Pesach kugel repertoire.)

BTW, make your matzo balls separately and serve those who can eat gluten them and for her either clear soup or some other soup topping...

Here are the recipes I got from my mother. She couldn't find the zucchini kugel recipe, sorry. I also just realized that they all contain potato starch, so I don't know how much use they'll be to you.

Kohlrabi kugel:
4 large kohlrabis
3 onions
6 eggs, separated
1/3-1/2 c. potato starch
1/3 c. oil
salt and pepper to taste

Shred the kohlrabis and chop the onions. Saute on a low flame, covered, till soft (it will turn kind of brown.) Separate the eggs, beat the whites into a snow. Mix the yolks, oil, s&p and potato starch into the kohlrabi mixture and fold in the snow. Bake at 350° till done.

Apple kugel:
6 apples, sliced
6 eggs, separated
6 tablespoons sugar
6 tablespoons potato starch
lemon juice

Peel and slice the apples, sprinkle with lemon juice. Beat the egg whites into a stiff snow, add sugar. Toss the apples with the potato starch, add beaten yolks and then fold in the snow. Bake at 350°.

Two-tone vegetable kugel:

Layer 1:
2 potatoes
3 carrots
1 onion
1/2 c. oil
1/2 c. potato starch
salt to taste

Grate the potatoes, carrots and onion. Add the oil, starch and salt and bake half an hour at 350°.

Layer 2:
3-4 large zucchinis grated
6 eggs
salt

cook zucchini ten minutes and drain. Beat eggs till foamy, add salt and zucchini. Pour over carrot layer and bake for 30-45 minutes.

Zucchini gets finely grated or coarsely grated?

How do you cook the grated zucchini? Boil? Saute?
