Is there a Sweet Potato Pie recipe from betweencarpools, or a similarly easy no-fail one from someone else?

Not on betweencarpools. This recipe easily made with a store bought KLP pie crust (crust is not flaky - doesn't need to be pre-baked). Or make it in mini round pans to serve individual crustless pies and make your own pesach crumbs to top them with.

Thanks! I didnt see your recipe, so I made this (I think I might have made this another year and liked it):
Sweet Potato Pie
Base:
3-4 sweet potatoes
1/2 cup sugar
1/2 cup coffee whitener, almond milk or orange juice
1 lg. egg, beaten
3 tbsp. oil
2 tsp. vanilla sugar
Topping:
1/2 cup dark brown sugar
1/3 cup potato starch
3 tbsp. oil
1/2 cup chopped pecans
Peel and cut sweet potatoes and boil in small pot until soft. Drain well and return to pot.
Mash, but don’t overdo it; the potatoes should be thick and not too smooth (to make the pie thicker and hold together better). Add remaining base ingredients. Mix well.
Pour into a lightly greased 9” round pan. Mix topping ingredients and sprinkle on top. Bake at 350 for half an hour.
