I have 2 that are both amazing

Pesach Apple Crumble

4 cup/s Potato Starch
2 Eggs
1 1/2 cup/s Sugar
1 cup/s Oil
1 pinch/es Salt
2 teaspoon/s Vanilla Sugar Optional
4 teaspoon/s Baking Powder Optional
Filling
9 Apples Peeled And Sliced
3/4 cup/s Sugar
1 1/2 teaspoon/s Cinnamon
2 tablespoon/s Lemon Juice
1/2 cup/s Water

Preparation
Combine the first 7 ingredients to form crumbs. (Don't worry if the crumble looks strange before you bake it.) Set aside 1/4 of the crumble. Divide the remaining crumbs between two 9" pans.
Combine the rest of the ingredients and set over the crumbs. Sprinkle reserved crumbs over the filling. Bake for 40-50 minutes at 350 (for ramekins, bake for 30 minutes). Garnish with apple crumbs.

and Apple Pie
5 Green Apples
1/2 cup/s Potato Starch
5 Eggs
1/2 cup/s Oil
1 cup/s Sugar
3/4 teaspoon/s Cinnamon
1 teaspoon/s Vanilla Sugar
Topping
1 3/4 cup/s Chopped Nuts
1/2 cup/s Sugar

Preparation
Preheat oven to 350F. Peel the apples and slice them into rings. Mix the potato starch, eggs, oil, sugar, cinnamon and vanilla together. Add the apple rings and stir until they are well coated. Mix the topping ingredients together. Place half of the topping into a round pie pan. Put the apples on top in a circle. Pour the egg mixture on top of the apples and cover with the rest of the topping. Bake 1 hour uncovered

Looks great, as does the other recipe. I've been making an apple strawberry crisp from Mishpacha but it calls for nuts, so this is just what I was looking for.
A few questions:
I assume it'll work for similar fruit fillings?
Why the water? Oh, I copied it over wrong, I see it's just a half cup, not 1 1/2. If I add strawberries do you think it's necessary?

I have only made it with apples. I am sure it would work well with pears, and fresh strawberries. The water is for the crumbs so I think it is necessary. if you make it with a different fruit let me know how it comes out.

So do you add the water when you make the crumbs or it seeps into the base when combined with the fruit?

I made an apple pear crumble that was in Binah. The top comes out less crumbly and more cookie like but the taste is divine

For the apple crumble recipe, what’s the best way to reheat after freezing?

I don't think you can freeze a fruit cake, won't it come out soggy?
