Crepes were much easier to make than I thought. Fill with chicken or meat pieces and veggies, wrap and bake. Yum!
And it does sound like you have a lot. Breathe.

OP an easy veggie side dish is zuchinni and carrot and onion . Sautee the onions , add thinly sliced zuchinni and carrot. Let sautee for a bit. Season with salt, paprika, black pepper, garlic powder and onion powder . Cover pot and simmer until veggies are nice a soft but not falling apart.

Sautéed squash and tomatoes
Sauté onion, add a cubed squash. Sauté till soft. Add cubed tomatoes (I peel them) and sauté another 7 minutes. Add salt and pepper to taste.

The first thing my eye caught was chocolate moose, and I thought I read chocolate mousse, so this recipe turned out to be quite disappointing, even though I'm sure it tastes great.

I made
vegetable blintzes with a mock mushroom sauce (we don't use mushrooms)
apple crumble
doughless potato knishes
beets and horseradish aka chrein
I'm going to make fresh:
vegetable salad
roasted vegetables
sauteed squash
mashed potatoes or cubed potatoes
sweet potato chips
In any case, I find if you have fish, soup, and main with every meal, one side dish tends to be enough (and sometimes more than enough...)

Thank you for reposting this recipe. We made it (sans Italian seasoning) for the first days and when the original (fresh) mushrooms were gone I just added a well drained can of sliced mushrooms to the remaining dressing.

Bumping this up to thank you for this recipe! I just made it and it absolutely tastes exactly like my chometz apple kugel (actually slightly better).
I made some small changes - I used almond flour instead of ground almonds and I cut the apples instead of grating (also baked it a little longer, which is probably related).

Roast whole beets. Peel and cube. I make mine with red wine vinegar or lemon juice, depending on what I have. Olive oil, fresh grated ginger, lots of salt and pepper. Pistachios or scallions optional. Sometimes I just use slivered red onion instead. Really delicious.
