Coconut flour is very dry. I think you should Google it

Coconut flour is not a good substitute bu itself because it absorbs the moisture and will make any baked good dry and crumbly. I would use tapioca starch or you could do 1/2 cup tapioca starch with 2 or 3 tablespoon coconut flour depending on the consistency of the batter.
