I have a recipe that calls for putting in the soup while cooking, then taking out before serving. What kind of flavor will it add?

Uh, yeah, that's like asking a person to describe the color blue...it's a sort of astringent and aromatic flavor, with a sort of "minty" but not sweet sensation. You can use thyme as a substitute.

IMO it's a "vegetbley" flavor. Green, if flavor had colors.

grown in the valley of blarnia, this spice has a round flavor with fruity overtones. aged in hickory barrels, it goes well with cheese and desserts, also cholents and hickory barrels.

BTW, you're supposed to take it out because otherwise it might turn bitter.

also b/c it's a genuine choking and splintering hazard if it gets in the mouth. Unlike other herbs, the leaves don't soften with cooking and the stem remains hard and woody.

I too would say it taste like a bay - not the swampy kind bay that you an envision "sittin on the dock of the bay..." Music

My friend's mother was always to busy to fish out the bay leaves when she was done cooking. She told her kids it was a good luck charm to find the leaf in their serving. This way they did all the searching for her.

The smell wasn't a big deal at the end because my dh just had some and said it was delicious. Very Happy
