Can you for the first rising, let the challah dough rise for 2 hours or is that too long?
And what would be the quickest rising time and method?
I use dry yeast and also egg.

Some people put the challah to rise in the oven on a low number and then put up higher . Don’t have exact timings and degrees.

2 hours is definitely a standard rising time. Not too long at all. To make sure the yeast is good, I suggest activating it separately in warm water with a little sugar if it bubbles and the water level rises then the yeast is good.

I let the dough rise for an hour, braid the challah, and rise for another hour. Then bake it on low for 1/2 hour before raising the temperature.
