is maple syrup more nutritious?
do you use less of it than sugar when substituting?

No significant difference nutritionally - they are both simple sugars in terms of how your body process them and neither provides any significant vitamins and minerals. They are both best eaten as a relatively small percentage of your total calories.
Subbing one for another really depends on what you are using it for. If you are baking you can't just swap maple syrup for sugar and vice versa. If you are using it for a savory dish as part of a sauce it really depends on the recipe. If you are using it as sweetener for cereal or pancakes or equivalent it is really a matter of personal taste as to how sweet you like something.
