I try to use only whole wheat flour and no white sugar, although truthfully using honey and maple syrup is probably not that good for me either.
I've tried so many "healthy" cakes but they either come out raw in the middle or are so dense, not light and fluffy at all.
Is there any such thing as a vanilla cake without white sugar that I could use for birthdays, strawberry shortcake etc?

In my experience, no. And I’ve tried a lot of recipes in my 20+ years being married.
IMO best to bake a regular cake for special occasions and enjoy a reasonable serving size.

I only use ww flour and honey/maple syrup mostly. Once in while coconut sugar and I make vanilla cake.

Healthy cake? We call that fruit salad in our house. Just eat and enjoy real cake as a treat.
