French fries is one of the foods she'll still eat but only on some days.

She picks out the other food throws it, eats the chips and then asks for more chips.

Serve foods you want her to eat. She can choose if/how much she eats from the foods you offer.
In general, though- why is Pesach food so unfamiliar? Does she eat chicken and meat and fruits and vegetables during the rest of the year?
It might be a good idea to introduce her to plenty of different foods, so one week of no chametz isn't devastating.

I think I would mKe her sit through the meal in front of plate of food without throwing food or pushing away the plate. Be firm without getting angry. Pick up what what gets thrown away. And nicely put her hand down.
She has to sit and watch everyone eating without being disrupting. You can give her a snack after an hour afterwards because she shouldn't be hungry but it must be enough time later so she shouldn't realize that after not eating dinner she will in the end get her preferred food to eat.
Also a Yiddish mother can always ask hashem a quick prayer just whatever you're doing

She ate a lot carbs like pasta and rice, chicken with breadcrumbs, like chicken nuggets and schnitzel, was one of her favorite foods and she was really upset at the different crumbs. She always ate everything but she still got upset about the missing food and the different tastes.
