I'm sick of mashed potatoes and roast potatoes.
Not in the mood of potato kugel.
Is there anything else I'm not thinking of? (We don't eat kitnios)

Potato blinzes- crepes filled w mashed potato + fried onions mixure. Its still mashed potatoes, but feels different.
Oven fried Potato chips/ french fries. Not sure how good it is when not straight out of oven, though.
Sweet potato cubes, roasted, either w spices or finished with some sort of honey based sweet glaze.
Sauteed carrots, onions and zucchini- somewhat starchy bec carrots.
Potato+vegetable kugel
Not many options other than potato/sweet potato if you specifically want a starchy side dish.

Edited for typos

You didn't mention no gebrochts. Matza farfel is an easy savory starchy side. There used to be a recipe on the box. I think kosher by design has a recipe, she calls it meichel.

Farfel (usually with onions and mushrooms) is a Pesach staple in this house.
I also make a fantastic mock fruity noodle kugel with it.
You can also make a savory vegetable bake with matzo meal.
There's a good recipe in the original Kosher Palate.

I got 47 search results for parsley red potatoes with you as an author.

Is this it?

We love
crispy red potatoes (oil and spices in pan, red potatoes cut in half, open side down on spices)
crispy oven fries (potatoes cut into thin french fry shapes, with oil, curry and salt)
parsley red bliss potatoes (baby potatoes cooked in sauteed onions, lots or paprika and parsley)
spicy sweet potato fries (made with cumin, garlic powder, pepper...)
sweet potato coins (oil and salt)
baked potato with a margarine/garlic/parsley spread or with a fat free roasted garlic spread
I'm sure there's more, I just have to think a little more into it!
