I received some carp before Pesach from a food pickup, but when I tried to cook it, it was labor intensive, didn't taste very good and was hard to pick out the fish from the bones.
Am I missing a secret? Is there a way to cook carp so that it tastes good?

There is regular Carp and Winter Carp.
Winter Carp supposedly tastes better but has more bones. I don't taste a difference.
I only make it Pesach when I use minimal ingredients but it's delicious.
For 8 slices-
One onion in a mesh bag
1/2 TB salt
1/2 cup sugar (can put less if you want)
4 cups of water
2 nets of skin from the store
Cook for 2 Hours
