Pls Help With Menu - Overwhelmed

I will be moving 3 days before Shavuos and am looking for a very very simple menu that I could pull off even without fully unpacking. Its just me dh and baby. I am off dairy but dh would defintely want a dairy meal. Any ideas? Thanks!!

I am doing the following (mid construction so using a relatives kitchen, have to make everything in one day)
Buying dairy sauce for pasta and onion soup from local pizza/dairy store - that plus salmon is our dairy meal
Challah - buying
Making potato kugel, Shnitzel, chicken in duck sauce, franks and blanks, deli roll, orzo or farfel, easy brisket in oven, and a few fresh salads which I’ll make Friday

I just made a super easy Greek Pasta Salad that you could make with baked salmon and cheese bourekas (the kind in the frozen case--just open the package and bake). It makes a large quantity and you can keep it in the fridge (tightly sealed) and serve for a few days. Here's the recipe for the pasta salad:
1 Package bowtie pasta cooked al dente
1 bottle Italian dressing
2 Tablespoons Dried Oregano
2 Tablespoons Dried Thyme
4 shakes Garlic Powder
I Tablespoon Dijon Mustard
Feta Cheese (Put on side to keep salad pareve)
6 Mini Cucumbers peeled (optional) and diced
1 quart grape tomatoes diced
1 can sliced black olives
1 jar roasted red peppers (4 peppers diced)
medium red onion diced
In a large bowl, mix diced vegetables with drained pasta. Add in Thyme, Oregano, and Garlic Powder. Coat pasta with salad dressing and mix in mustard. Keep mixing and adding dressing until the pasta and all vegetables are coated. Dice feta and put on side (if there are people avoiding dairy) or mix in. Taste and adjust seasonings. Serve warm or chill and serve later. Serve with Salmon and Hot Bourekas.

Baked ziti is really simple, boil pasta, mix with marinara sauce and top with cheese in a 9x13. Buy take out.

Cook now and store in a friend's freezer:
Roast (slice and freeze in 2 ziplock/pans so you can have for 2 meals)
Shnitzel
Meatballs in tomato sauce
Raw chicken cleaned and spiced, just stick in the oven
Salmon cleaned and spiced(Defrost and put in oven)
Kugel(potato, broccoli, cranberry)
Orzo
Buy on erev yom tov salads, frozen vegetables (just drizzle olive oil and add spices before sticking in the oven)
Rice can be made on yom tov in disposable aluminum pan in oven.
Soups (if it's not too hot on shavuos!)
Make extras now for weekday meals.
Let all your friends know you're accepting invitations!! LOL
