Easy yt menu with many food restrictions

Here's the deal. My brain is way too tired to figure out a menu. I do this every day of the year but now I just can't do it. I'm starting my 9th month and cooking for family with food restrictions for a variety of reasons. I can't be on my feet for so long, at this point, so I need quick and easy.
Shabbos will be regular shabbos menu.
No dairy meals.

These are the rules:
Each meal has to have a meat and a chicken
No nuts, coconut, soy, corn, gluten, or seeds
Chicken can't have eggs
Meat can't have sugar
Veggie sides can't have any sugar or grains
Starch sides can't have any eggs
No pre-mixed spices, though I have some that I make myself like chili powder, Montreal steak seasoning, Sharma seasoning
Each meal has to have a starch side and a veggie side. A fresh salad would be a nice bonus, though not totally necessary.
Dessert will either be fresh fruit, homemade applesauce, or homemade sorbet. Unless you have another idea that is super quick and easy that kids will appreciate.
And I don't care to just serve one course and dessert. 5 course meal not necessary in the slightest bit.

My brain is mostly fried so I hope I got it all right. If you're still reading and following, you're probably a genius and I hope you can help me come up with 4 yt meals!

Meal number one
Brisket( second cut. Sprinkle paprika black pepper onion powder garlic powder. I sprinkle brown sugar but you said no sugar so u can drizzle a little honey. Cover bake low number for 4-5 hrs. I ain't add water. It releases)
Dijonay cutlets - saute onions add 1 c Mayo. About half cup honey. Mix .pour over cutlets. Bake uncovered Abt half HR until it starts to brown
Mashed potatoes. Use Yukon gold
Snap peas- saute onion . Add frozen sugar snap peas. Saute til hot. Add salt.

Meal number 2
Pastrami roast- can bake in oven or in a crockpot til soft. In the bag
Grilled cutlets
Roasted potatoes
String beans

Meal number three
Fried or baked breaded shnitzle ( use crumbs that fit your criteria.
Pulled beef
Rice or potato kugel
Popcorn cauliflower ( roast it in the oven with spices .olive oil . ( Calls for tumeric. If you like that flavor..but you can use anything your kids like)

I cook very similarly to you and here’s what I’m making. Very simple. Take what works from the list.

Salmon- baked with homemade spice mix and lemon juice
Tomato dip and something with eggplant
Chicken soup for the night meals
Potato kugel - can be made egg less if needed
Some kind of chicken- not sure
Mashed potatoes
Crispy potatoes
Green beans
Salads
Cholent for shabbos day
Meat for the other day meals - cooked low and slow in water, onions, peppers, salt and pepper

For the dairy kiddush
Gluten free cheesecake ( using klp cc cookies for the crust)
Ice cream
Chickpea pasta with some kind of sauce
Pudding
Chocolate cheese balls

Meal number four
Capons stuffed with rice. Sprinkle spices on top. If your allowed spread duck sauce. Baked covered
Minute steak in the oven- layer sliced onion. Than minute steak. Sprinkle with spices. Add a drop of water. Bake low and slow
Broccoli
Any leftovers from other meals.

Some ideas that are slightly different but fairly simple:
Moroccan salmon

Cream of chicken soup made from regular chicken soup recipe

Marinated broiled baby chicken

Garlic broccoli

Roasted mushrooms

French roast made with salt, pepper, tomato sauce and lots of sautéed onions

Cowboy steak made fresh on yt with balsamic tomato, onion and garlic confit

Cauliflower garlic mash

Rice with roasted veggies

Pulled beef made with wellbees barbecue sauce inside portobello mushrooms or lettuce wraps

Quinoa pilaf





For dessert you can do parve ice cream that your family can have, homemade blueberry sauce and maple candied oats

Grilled peaches or pineapple with ice cream

Blueberry and strawberry or peach and blueberry crumble with oat and gf flour topping

This looks great. Only thing is the chicken cuz mayo has eggs, chicken can't have eggs with it.
But I'll totally use this menu otherwise. Thanx!

Baked chicken bottoms with pepper & mushrooms
Roasts
Deli salad
A salad made with Grilled chicken or steak strips or with schwarma chicken ( you can grill meats on hot plate griddle with parchment paper on yom tov)
For fish you can do baked or cooked salmon, or a salad of lox strips or pieces of baked salmon cubes.

For baked salmon you can do oil & spices, or with lemon/citrus topped with tropical salsa like pineapple, mango, pom arils, you can add purple onion if you like, could be cold salsa or baked with salsa, or salmon with letcho on top.

For fancy appetizer you can do eggplant rollup with veggies or rice filling ( no breading with crumbs)
Stuffed peppers or stuffed cabbage with rice/veggies
Baked acorn squash ring filled with roasted veggies in hole
Spaghetti squash salad
Brown rice pasta
Quinoa with saute'ed veggies
Stuffed portabella mushroom caps
Green beans saute'ed with pastrami & mushrooms
Broccolli saute'ed with pastrami
Roasted veggies
Roasted veggies with pastrami salad

Baked sweet potatoes whole with peel
Baked apple whole with peel plain or with cinnamon/honey
Carrot chips savory or cinnamon honey
Roasted cubed butternut squash with honey cinnamon
Roasted zucchini & yellow squash round slices with spices

Chicken rollups filled with saute'ed cabbage, pastrami & mushrooms
Saute'ed cabbage in tomato sauce, you can use splenda instead of sugar
Saute'ed zucchini in tomato sauce
Veg soups
Butternut soups
Zucchini soup
Low carb Cream of chicken zucchini soup
Broccolli soup
Cauliflower soup

Baked sliced pears with cinnamon

For chicken salad you can add mango, oranges, pom arils if you want it more interesting
For salmon salad you can add in green apples, pom arils, purple onions with a balsamic or wine dressing

Green bean bundles tied with strip of pastrami or carrot
Roasted asparagus they have bug free frozen
Roasted frozen bug free brussel sprouts
Any combo veg frozen sauteed with onion
Pepper steak with diff color peppers
Sauteed chicken cubes with onions spices or add in cubed carrot & zucchini when saute'ing

Wow! So many great ideas here!

Just pointing out that the night meals are very late. For the second night meal (3rd this year) especially, I find nobody is very hungry, so I keep the menu very light, eg. soup and a big salad with grilled chicken and roasted vegetables.

You're right birch, but I'd you have guests or sons in-law or bochurim, you usually the serve a lot...or at least offer. That's why the last meal always includes leftovers and just one new main
