Healthy Recipes that can be warmed up on hotplate

Does anyone have any healthy dairy or parve recipes that can be warmed up on a hotplate? I am not leaving my oven on, just hotplate on a timer.

My menu is far is soup (not sure yet what kind), salmon, big lettuce salad, penne, blintzes with sour cream/fruit, garlic knots, iced coffee, cheesecake

I would love another healthy recipe. I saw one on kosher.com for cheesy roasted veggies but I do not think it would taste good warmed up on a hotplate. I was thinking of maybe a healthy quiche but I do not have a recipe.

Any ideas?

I don’t think you need anything else. You could make a mushroom leek or spinach quiche, or roasted veggie platter served room temperature with pesto or plain , or beet orange salad, or caprese salad with good tomatoes, soft mozzarella and basil

To clarify, I'm not serving all of these dishes in one meal. These are all the dishes that I will serve throughout the 4 meals. Like the night meals might be soup, salad, blintzes, and day meals might be soup, salad, penne. So I want one more veggie dish for each meal.

For a roasted veggie platter, would you serve it cold/room temp or warm it up on a hotplate?

I steam/cook fresh vegetables on a hot plates. Mushrooms and zucchini work very well.

Yes you can place a parchment paper onto hotplate/griddle. Spray with oil, add spices and let it roast on hot plate.

Yes, I put it in a foil pan drizzle oil and some salt. For mushrooms I would some onion powder and black pepper. Cover and check on it after half hour. Broccoli and cauliflower should definitely work will take longer. String beans too.
