I made baked ziti and froze last week (after baking). Can I just thaw in fridge and reheat on hot plate or do I have to bake it in the oven again? I'm not leaving the oven on for the Chag.

You can definitely do that. Make sure it's thoroughly defrosted through and through. I'd also put a towel on top of the pan to insulate it.
The bottom might slightly burn or get crunchy, but the rest will be great. I've done this numerous times for seuda shlishits that I've hosted.
