In relation to the high cost of food, I've seen people post that they serve chicken only on shabbos. I'm assuming they exclude fish and meat from weekday meals as well, as that's more expensive than chicken. I'd love ideas for wholesome, filling meals that exclude these items.

Lately I’ve been finding ground beef very cheap to use. Is that an option.
Quiche
Lasagna
Eggplant parm
Omelets
Fellafel and pita
Shakshuka
Pareve bean tacos (sometimes I use our leftover cholent for taco night)
Bean Chili
What about stretching chicken. I find stir fry’s you don’t need that much chicken to go far. Or shewarma or another dish were you stuff a pita with chicken and other infredients
Soups. Lentil, pea. Are cheap to make. Healthy. And very filling.

Thankfully my kids really like beans and lentils. Black beans and rice is a favorite here. I make chunky vegetable soup and add beans, usually cannellini. I make chili. Salads with chickpeas as well as seeds and nuts tossed in. The also love simple steamed and salted edamame in the pods. Sometimes I do a stew with potatoes, lentils and veggies. I also make my own veggie/bean burgers.
I eat vegan except for on Shabbos and YT so it just tends to be what I make for everyone.
