I am in midst of designing my kitchen and the upper cabinets are 12” deep. It seems very shallow.

The upper cabinets are always shallow compared to the bottom ones. 12 inch is pretty standard. It would be very impractical to have more depth since you would not be able to use the back of the shelves much and it would make the counter impossible to use. I bump my head in the open cabinets doors as it is.

12" is not shallow. You definitely don't want deeper on top, it sets you up for a mess of items stuck in the back.

12 inches. The one ontop ot the refrigerator is 24 inches. It is way to deep. I use it for pesach storage.
