share your method of making this. how to cut and how to bake...
I read that soaking it in water reduces starch so comes out more crispy but also read that sprinkling corn starch makes it crispy. if I want to reduce starch why am I adding starch?
I would rather not use cornstarch any alternatives?

I haven’t found a way to make it crispy hu just baking. It usually stays soggy s I never tried soaking in water. But I find if I make a mixture of flour and oil - equal parts with a little salt it gets crispy.

Are you opposed to using any oil at all? I toss mine in seasoning and just a tiny bit of oil before spreading them on a sheet to bake. They will crisp, but it's not going to ever be like regular French fries. Even deep fried sweet potato fries don't really come out like white.

I would use a little oil.
which seasoning do you use?

In a 9x13 pan at 425 degrees for 1 hour. If on a cookie sheet with low sides, 400 for 40 minutes and fries will be soft but delish too.

looks really good! do they come out crispy?
how do you slice sweet potato to a 1/3 pieces? which way?
a bit slow when it comes to such things...

Lightly crispy. Very good.
Peel. Slice the sweet potato the long way (into 4 long ovals). Then slice each long oval sweet potato into long fries.

if I do it in a 9x13 pan at 425 will it come out crispier than when doing it at 400 in a pan with low sides?
why cant I just bake it the same temperature-425 for an hr- in pan with low sides and have it come out crispier?

It kind of burns/dries out without the high sides, when baked for longer.
