Where do you live and how far are you willing to go? Do you want kosher food and minyanim accessible or you don't mind bringing food?
What are your ages and what kinds of things does your family enjoy?

Need minyan dont mind to take along food
Ages 7 &11 and yeshiva bucher
Looking something exciting

Lincoln, NH would be great for those ages and isn't so far from you. Niagara Falls is another option. Jiminy Peak in the Berkshires could work as well.

Was in colorado last yr was breathtaking
Wanted go to utah but flights keep on canceling not in mood of waiting in airport
So looking for something really exciting that we can travel by car
Is jimney peak close to minyan ?

Jimminey Peak usually has a minyan all summer. very populated area.
After Colorado, nothing closeby will be as breathtaking! The closest you'll get is New Hamshire of Maine (Acadia National Park) both a bit of a drive but beautiful places.
Are you looking to fly to Utah or are you open to Las Vegas? There are beautiful mountains right outside of the city. We flew there a few years ago and drove to Utah to national parks. It was quite an experience.

Trying to avoid the airplane
Is jimney peak ideal for 2 weeks is there enough activities for these ages?

It's great for 2-3 days, but you will be extremely bored there if you go for 2 weeks. You could split it with Lake George and/or Lincoln, NH or somewhere in VT (but minyan there is more challenging).

The only minyan in VT open to the public that I know of is Chabad in Burlington. They have a Shabbos minyan but weekday when we were there was only if there were enough tourists, so you'd need to check with them.

There are sometimes paid programs in Killington, but they are generally not open to outsiders, and I'm not even sure if they are opening this summer since I haven't seen any advertisements.
