Is there a difference in how they bake?

With gas ovens, you don't run into issues with challah and delicate cakes. Your recipe timings will also be accurate.
Do also read about the self clean issues that come up with touch screen ovens.

Thank you. It’s interesting because I’d think they heat up an oven to a certain temperature, just in different ways but I don’t understand why they’d bake differently. I guess I’m not a scientist 😂

I was told gas is good for cooking and electric good for baking and that’s why ppl do both

I agree with this. A gas stove is far better than an electric one, but for the oven itself I much prefer electric. The heating is more even so the end result is more reliable, though it’s true the initial preheat takes longer. Electric also has a dryer heat, which is better for getting things crispy. When I want a moist heat, I either tent the food or manually add water to the bottom to moisten the air, but if you want a dry heat from a gas oven there’s really nothing you can do.

Are the gas ovens all not wall ovens?
If I want a 36” range what are my gas options? Either as 1 unit or as a separate wall unit oven which can be 30”
