Not sure what fodmap is but here are some low carb ideas- Almond flour muffins/pancakes made with a little honey or blueberries, smoothie with almond butter mixed in, butternut squash muffin/kugel, yogurt with chia seeds or fruits or slivered almonds or granola, techina, tuna, chumus etc

Why not eat whole eggs? But anyways eat whar you want. Who says you have to eat anything in particular? Eat on plan whatever you want.

Dairy and hummus have fodmaps and oats are not so low carb.

Greek yogurt is low fodmap.
Quinoa with plant milk.
Smoothie with nuts
PBJ with gluten free bread
