Not quite the same but you may like it even more:
In a food processor blitz 2 cups of raw cashews. Once a fine powder at 12 medjool dates (pitted) and pulse until it’s a smooth consistency. Add a1/2 tsp of vanilla extract and pulse again. Add1/4 cup of mini chocolate chips either by hand or in the processor then smooth out in a parchment lined baking sheet into the thickness you want. It may help to lay another layer of parchment on top and use a rolling pin to get an even thickness.
Refrigerate for a few hours then cut into individual bars. I like to keep mine individually wrapped in wax paper in the freezer.

Thanks! Does it need to be medjool dates or are regular fine too?

Medjool ones are larger so if you get regular ones you’ll probably have to double the quantity.
