What’s the best way to cook skirt steak to be eaten room temp on Shabbos day?

Grill medium as usual. Wrap tightly in foil. Take out half hour before slicing to bring to room temp. Serve over salad.

It's delicious the way it is - skirt steak is tasty and salty with nothing added.

Nope. It has delicious flavor grilled just as it is. It's a waste to soak it and then marinate it. You miss all the great parts about skirt steak.
