She might, but not so many people have a parev crockpot. The results would be pretty similar to leaving it on the platta, anyway.

According to Rav Shlomo Zalman and to R Ovadia, one is allowed to set a plata on a timer and put pre-cooked liquid foods onto the plata while it is off and allow them to heat up when the timer is off. This is because the distinction between davar lach and davar yavesh is anyhow a machlokes (sfardim and ashkenazim pasken differently, sfardim allow reheating davar lach) and the timer turns the whole heating into a grama. So it is highly likely the poster who serves vegetable soup utilizes this psak and does indeed serve a regular vegetable soup.

(Of course, ask your own rabbi before deciding to pasken this way in your own kitchen.)
