was advised not to cook fish broth longer than 1 hr as it becomes bitter. for other reasons too.
it doesnt need to cook as long as chicken broth as bones are thinner so easier/quicker to extract goodness.
I want to know, those who make it and only cook for 1 hr does it actually gel in the fridge? which is the proof how much its collagen/gelatin its got?
