Simple mushroom quiche

I see some rather elaborate recipes, half and half, shallots and what-not.(I mostly cook without recipes ... although I often read through a few for ideas.)

I need low-carb and gluten free, I can do milk substitute or yogurt.

I'm thinking of doing this, if you have a better idea please advise:

I thought I'd just saute an onion, add sliced mushrooms. Mix with some eggs. (Should I add some soy milk or a little yogurt?) Salt, pepper, maybe something else will occur to me. Nutmeg? Sage?

Spray Pam & sprinkle gluten-free panko crumbs in cupcake liners. Pour in batter. Sprinkle more crumbs, spray a little more Pam. Bake til done.

Am I missing something? Have you done something similar or have a fairly simple recipe to suggest?

I make gluten free quiche all the time,

For the crust I mix 1 cup gf oats, 1/3 cup flour, salt, 1/3 cup veggie oil. Bake for 10 min at 350

For the quiche I sautte onions and mushrooms. Put sautéed veggies on top of cooked crust. And then mix in a bowl 1 cup milk, 3 eggs, 1/2 teaspoon baking powder, salt, pepper, paprika. Bake at 350 for 45 min. If you want it milchig u sometimes add cheese.

You can use farmers cheese or blended cottage cheese and use that with shredded cheese and milk.

I try to limit carbs, I just omit the crust altogether.

I found this among my Pesach recipes, may adapt to use mushrooms
... still would like some kind of spice

Veggie Quiche
3 peeled zucchini sliced 2 peeled carrots sliced
1 onion diced 1 peeled red pepper diced
½ c. almond milk 6 eggs
1 tsp salt
Fry veggies in non-stick pan with 1 tsp. schmaltz, until slightly softened.
Combine with remaining ingredients and pour into pan that has been lined with parchment paper.
Bake at 350 for up to 1 hour until golden brown.
Variation: Add thinly sliced sweet potato or regular potatoes to veggie mixture.
