I think they're starting maariv as early as possible so they don't get home too late. I plan on drinking water as soon as I can and then prepping food so he can walk in, make havdalag and we can eat (and then I have to go out to mikvah 😫)

Nope told him to hear it there and eat what they serve then he doesn't come home starving and I've eaten before serving him

Say havdala on your own. No need to wait for your husband if that’s hard (and not everyone has a husband to wait for) but best make havdala before eating.

HAVDALAH on Motzei Tisha B'av Nidcha
On Motzoei Tisha B’Av Nidcheh, Sunday night this year one makes havdala and is permissible to drink the cup of wine or grape juice. No bracha on besamim or a Ner, only make a borei pri Hagafen and say the bracha of Hamavdil.
The minhag is not to eat meat or drink wine until Monday morning. However laundry and haircuts are permitted right away after the fast on Sunday night. To hear music its brought down to wait until the morning as well.

Why?
Eat without havdalah: problem
Make your own havdalah and eat: no problem.
If you are going to eat, why not make your own havdalah?

Trying to decide if it's acceptable to use coffee if I have grape juice available and just like coffee better... I'm thinking no

I follow Guidelines by Rabbi Barclay and Jaeger and they are pretty clear on grape juice being preferred after the fast. For people who need to eat during the day there was a different set of recommendations though.
