Anyone been to hotels with two bedroom suites or connecting rooms with 2 beds in each room in Niagara or buffalo ny near the border?
Prefer to use Marriott points. Been searching but not so easy. Also are there any minyonim on the American side?

I don't know anything about those areas' hotel options or minyanim but Homewood Suites by Hilton in various cities have shown to have 2 bedroom suites.
Your best bet is really to call a hotel by the area and ask about adjoining room availability if you're not going the suite route.

We stayed in the extended stay right across the street from the m the young Israel. It had 2 bedrooms.

Yes, we recently stayed in the Marriott Niagara Falls, and it was a 10 minute walk to the Young Israel. Connecting rooms. And we used points!

They didn't have a room with double beds connecting to a room with double beds. One room had a king-size bed, which gave us more living space to eat our shabbos meals.
