From the time I take the potoates out of the water, shred, mix and put it in a pan, it always turns brown. What's the trick?

I mix in onion in each batch that I put in the processor. And work quickly ☺️

Putting in a bit of flour while it’s sitting and mix. It’ll stay white.

My kids don't like the onion flavor in potato kugel. Vit C is magic.

I make potato latkes where the mixture sits a long while as the batches are frying. It stays white till the end.

Onion doesn't really have much of a taste in potato kugel, in my experience. Where do you get vit c powder? Regular pharmacy?

For onion sensitive people you bet it has a taste LOL.

Anyways, for tomorrow I'll try the onion and see how it works. If it doesn't work, I'll have to try the powder.

adding eggs to the potatoes in the food processor.

Or have some beaten eggs in a mixing bowl and quickly stir in the grated potatoes.

Pre-Heat your oven and oil your kugel pan before grating potatoes, so everything goes very fast
from food processor to into a HOT oven.

My trick is to soak the potatoes for at least an hour after peeling. It makes a huge difference!

Def Yukon gold potatoes. Makes a way better kugel and it's never brown. Or gross tasting. Klondike green giant is the best...

Potatoes do have seasons, so now they aren't great... just switched to yukon gold, it tastesa bit differentbut it's absolutely amazing!

We soak the potatoes till we're ready to shred it. We do mix everything first then we add the potatoes

I preheat oven.

I make the egg mixture first and then shred the potatoes and mix.

Straight into got oven.

Never had issue my kugel getting brown,

Citric acid is also known as sour salt, available in the spice aisle of your regular supermarket. Don't use more than a 1/4 of a teaspoon or else your kugel will taste like lemon.

Right after you shred the potatoes, rinse them under the faucet in a colander, then squeeze excess water out. A bit time consuming but works. This is a trick from the late great Noreen Gilletz.
