I second vitamin c powder. Doesn’t add a taste, but keeps it nice and white.

Please make sure any of your guests eating your kugel know that there is flour in it, as there are so many people who avoid flour for multiple reasons.
I never eat catered potato kugel because (aside from not liking it) I always assumed they put flour in. I didn’t know it’s something that people do at home as well.
