when I poured the carmelized sugar over the noodles the sugar hardened and became chunky, didn't mix smoothly what am I doing wrong?

The way I make it you're supposed to pour the noodles into the sugar, not the other way around. While it's still on the heat.

Be careful when you're doing what WitchKitty suggested. Stand back. It can splatter and create a mini explosion of very hot particles flying out of the pan at you.

How chunky? Were noodles warm or cold? If its only a little, it will melt in while baking.

noodles should be hot when you pour in the sugar mixture. otherwise it causes the sugar to cool and harden.
also you need to mix immediately upon pouring it in. wear oven mitts to do this.

I use a different method for yerushalmi kugel using UNCOOKED noodles.
After the oil + 1/2 C Sugar turns brown, I shut the fire and add
4 C Boiling Water - stand back, oil may spritz
Stir to melt the hardened sugar
1/3 -1/2 C brown sugar
1 tsp salt
black pepper
12 Oz UNCOOKED fine noodles.
Beat 3 eggs in bowl and add it to mixture - stirring quickly.
Bake in 9 x 13 for 1 hour.
Try it - much easier - don't have to cook the noodles, and the sugar doesn't harden.

My recipe is similar to bestbubbys. I carmelize the sugar then add (boiling) water-but carefully as it steams up very hot add you can burn yourself if not careful. I put boiling in parentheses cuz I never have patience to waut for the water to boil and usually use water that is hot but not boiling. And sometimes add some cold water too if there isn't enough hot. Then I let it reheat to boiling-the sugar which hardened when adding the water will melt and liquify. I add the oil while its reboiling. Then I add the noodles salt and pepper and cook for 10 minutes. I let it cool for a bit before adding the eggs and baking.
