Capons stuffing - not rice or kishka, and easy?

Thought I defrosted regular chicken legs, oops it’s capos! Now I need a quick recipe...thanks!

I loved the Mashed potato stuffed capons my mother makes. She stuffs them with mashed potatoes & sometimes adds a some pastrami. You can do sweet potatoes

you can just fill it with lots of pastrami.
spice with garlic powder and paprika, spray with pam.

cook for 2 hrs. pour on duck sauce and bake uncov for 1/2 hr.

If your referring to boneless leg and thigh you dont have to stuff them. I make any recipe that would call for chicken breast. I like this much better.

A lot of grocery stores sell different types of kugels and soufflés in their takeout sections. Pick a flavor and stuff with a piece. You can get broccoli kugel or a spinach soufflé. Butternut squash works well too.

I freeze them fully cooked and never had an issue. Just defrost and warm up.

Sweet potato stuffing. Cook or bake a sweet potato, sautee an onion till very soft and caremlized, combine with sweet potato and a little salt. I stuff under skin of chicken and freeze raw. (I often make this for Pesach as a chicken option for those who prefer it instead of meat, or as an addition to meat. I freeze it raw and defrost and pop it into the oven on YT morning, so it's ready and fresh by the time shul ends and we get to the main.)

You've never frozen anything that has mashed potatoes? I find the texture changes a bit.

Yes. It should be a good smooth filling- like when you freeze potato knishes. Not a liquidy mashed potato or the liquid will separate.

We make vegetable mashed potatoes and stuff chicken with that. We've frozen it raw too.

I sure did. So here's my question, potato knishes raw freeze beautifully, shepards pie doesn't I use the same mashed potato recipe. Where am I going wrong?

I find that if there is oil in the mashed potatoes it freezes better. I saute onions and add it to the mashed potatoes with the oil.

I feel so confused.

Capons are neutered roosters. I have not seen them in years! I feel like when backpacks are called briefcases. Like what?

Boneless chicken bottoms don’t need to be stuffed. We grill them on the barbecue.

Stuffing is so much work!

Hey, I was confused too when dark cutlets with skin were suddenly called capons. But by now I just refer to it the way it's listed on the package from the butcher. A package of capons it is.
