Do I add anything?
Apples?
I have lots of left over peaches that I want to make compote with.
Do I add sugar or just leave as is.

You can mix apples and peaches or leave the peaches on its own. I would add sugar when adding peaches, even though I don't add sugar to just apples.

If it’s the majority peaches & just a couple of apples how much sugar?

Taste it when its done, and if you feel it needs extra sweetness add sugar to taste then.

My mother used to cook canned peaches with frozen strawberries, grape juice, maybe wine, I'm not sure what else... I don't know if you're looking for something like that, but it does taste good (but also very sweet). I've made something similar and added in pineapple tidbits.
