I cooked 1.5 bags of broccoli on friday until it was soft. I was going to make a kugel but couldn't because I didn't have eggs. IT's sunday night, so I'm hoping it's still good. What can I make with it for yom tov that I can freeze? I have eggs now but I don't want to make a kugel because they haven't defrosted well in my experience. What can I make with it? Any recipes?

Maybe broccoli soup? That should freeze fine
Not sure if it will work well with already cooked broccoli though...

Broccoli muffins freeze very well. It's more like mini kugel. I make them all the time.

I have 2 broccoli kugel recipes.
One doesn’t freeze well like you experienced.
The other freezes perfectly fine. It’s made in a frozen pie crust shell. If you still want to make broccoli kugel I can give you that recipe.

Do you have a recipe? How do I defrost without it becoming watery and spongy?

I'll post the recipe soon. I remarm it in the oven. Sometimes I let it defrost overnight in the fridge and then reward in the oven. Not in the microwave.
