What type of schnitzel would freeze/reheat well?

Looking for something not deep fried.
I want to make a healthy(ish) schnitzel that I could freeze and reheat.
Need a tried and true recipe.
Also best way to reheat.

We love it baked in the oven. It freezes and reheats well. Make sure chicken is sliced thin. (If it’s too thick, I slice it myself to make very flat pieces.) Coat in mayonnaise and then corn flakes crumbs or bread crumbs, with whatever spices you like. Bake covered on 350 for about half an hour, or uncovered for less time, maybe 20 minutes.

Shnitzel is best fresh. Are you looking for only 'shnitzel' as in breaded chicken breast? Then for an oven baked shnitzel, the mayo is better as it helps stop the chicken dry out. Otherwise there are some nice sauce recipes. I find white chicken usually dries out less in a sauce.
Dinner done also has a good recipe for shnitzel. Cut up into small pieces, add oil, sesame seeds and breadcrumbs and you just mix it all together in a bag. Cooks best in small pieces, as I've tried it with larger pieces and it just didn't taste as nice. Not sure the exact amounts but could probably look it up later when I get home if you were interested.

I usually let it defrost in the fridge and then reheat covered in oven on a low temp, like 200-250. It’s fine for a short time on a higher temp also though. Reheats fine on blech too.

Thanks- I think I’m looking for a breaded cutlet recipe because I already made sesame chicken with small pieces and I’m really hoping it heats up well.
I know it’s best fresh… but I want to be in shul this year so it would be much easier if I can have most things prepared in advance
My family doesn’t usually appreciate baked schnitzel over fried but it’s good you told me that it heats up better. Some people will definitely still eat it baked and if not there will be plenty of sides to fill up on… I’m having guests who I think would be okay with baked as long as it tastes good
