I don't know how to cook meat

I'm not a bad cook but for some reason when it comes to meat I just can't figure it out. Please help me with clear instructions
This is what I have: top of the rib and flanken roast
I bought them because they were on sale no idea if they're actually good
I don't like using sauces or excess sugar, a little honey or sugar is ok with me
Also if you have ideas of meat that is easy to cook and not too expensive please let me know

Low and slow, in the oven, with plenty of onions garlic and other veggies if you like.
For roasts rub with oil and spices.
Chill in the oven overnight then slice. Blend the veggies it was cooked with and put in the freezer with the sauce. Warm up on YT in the oven on 200.

For the Flanken roast I like to use mina tangine sauce

Place roast in a zip lock bag
season the roast with salt pepper garlic powder onion powder and any dry herbs
Pour 1/2 the bottle of sauce
Close the gage and let meat marinate over night
Pre heat oven to 325
Pour the whole thing into a pan, roast and marinade. Foil tightly
Bake for 1 hr per lb.
Let meat cool over night in the refrigerator
Slice and store with sauce
Reheat in the sauce at a very low temp until heated through
It’s a VERY forgiving roast
