I need to decide what to cook today/Tom and freeze and what to make on Sunday:

Sweet crumb Challah
Mayo based onion dip (with Mayo)
Tomato Garlic Confit
Olive tapenade (with Mayo)
Eggplant Carpaccio
Salmon cubes with sesame noodles
Brisket
Some type of blended soup or chicken soup
Grilled chicken
Roasted veggies
Skirt steak
Mini lemon meringue pies
Sticky green beans
Roasted sweet potato spears
Cabbage salad
Beet salad

I would go through the list and mark SUNDAY for whatever cannot be frozen or made in advance, motzei shabbos for whatever can be refrigerated and made a little in advance, and divide the rest oven Wednesday and Thursday.
I don't know about some of the items on the list, but what I know for sure can be frozen and done Wednesday:

Challa
Soup
Grilled chicken
At least parts of the lemon meringue pies

I’m doing

Today challah and deserters to freeze
Tomorrow coming food some fridge some freezer
Sunday fresh salads

Edit- can I cook Thursday to be refrigerated for Monday and Tuesday or do I have to wait till Sunday (which I really rather not)?

I freeze the onion and olive part of the dips and add the mayo on YT or shabbos.

I am loathe to make fish for shbbos and then again for yomtov but I'd hate us to get sick so I'm cooking that fresh friday then again on sunday.
