It definitely will take more than 3.5 hours on low if using cholent meat; likely 3x that.

I find chulent meat to be pretty dry. Even when I cook it low and slow in liquid.

I don't think it will fall apart. Chalont meat is quite firm and dry, even if it cooks long.

Meat will not fall apart. It will also not take 10 hours depending on the temperature. But broccoli definitely will. You'll need to add them all way at the end.
