There are loads of what are called "sheet pan" recipes that essentially have you cooking the protein and the veggies in one pan.
There are pasta dishes like lasagna that are traditionally cooked in that kind of pan
What kind of recipes are you looking at because some types of recipes like braises really don't cook well in a lightweight pan because they don't provide the kind of even heat of a heavier pan.

Just posted our lamb and prunes recipe in another thread:
Put fried onion, salt, cinnamon, brown sugar, a little bit of oil, and the prunes on top of the lamb. We're using shoulder, but you can also use lamb chops.
You can cook it in a 9x13 in the oven, covered.
