This was a nice simple cake - perfect snack cake

Apple Cake With Cranberries

At the first glance this cake doesn’t seem very Jewish – it doesn’t require special apples or a fancy batter. It’s important to note, however, that the recipe doesn’t include any milk ingredients and calls for oil instead of butter. This means that, according to kosher rules, you can serve this dessert after any Shabbat dinner. The more apples you use, the tastier the cake, and if you throw in a handful of fresh or frozen cranberries, the cake takes on lovely autumnal hues.

cooking oil, for greasing
cake flour, for dusting
4–5 large apples, peeled and cored
2 teaspoons ground cinnamon
2 cups sugar
31⁄4 cups sifted cake flour
3 teaspoons baking powder
1⁄2 teaspoon salt
4 eggs
1 cup cooking oil
1⁄2 cup orange juice
1 teaspoon vanilla extract
a handful of fresh or frozen cranberries

Preheat the oven to 180°C. Grease a baking tin (about 33 × 25cm) with oil and dust with cake flour. (12.9” x 9.8”)

Cut the apples into quarters, then into thin slices. Sprinkle with the cinnamon and about 5 tablespoons of sugar.

In a small bowl, mix together the flour, baking powder and salt.

In a large bowl, beat the eggs with the remaining sugar. Add the oil and orange juice. Mix in the vanilla extract. Add the flour mixture, bit by bit, mixing as you go. The resulting batter should be smooth and free of lumps.

Pour one-third of the batter into the prepared baking tin. Sprinkle half of the apples and the cranberries on top. Add another third of the batter. Arrange the remaining apple slices on top, then pour in the remaining batter.

Bake the cake for about 1 hour, until well browned. Remove and allow to cool slightly. Slice into squares and serve while still warm.
