At night : farfel, sweet carrots ( Apple Kugel)

Daytime: mashed potatoes with sautéed onions, veg stir fry with sautéed onions, coarsely shredded squash, carrots and sweet potatoes.

Fire roasted asparagus: (from dinner done)
Asparagus- (recipe uses green but I use white bc according to star k it does not need to be checked, but depends how you hold)
Grape tomatoes
1/4 cup olive oil
Tsp salt
Tsp oregano
2 tsp garlic powder
2 tbsp balsamic vinegar

Oven should be set to broil on high
Mix oil with spices and pour over asparagus and tomatoes
Broil for 15 min on a baking sheet
Remove from oven and drizzle with balsamic vinegar

Roasted butternut squash:
(You can use fresh or frozen. If you use frozen, just defrost it before cooking)
Toss with a little olive oil and salt and pepper. Cook at 425°, check it after about 20 minutes. It should take 25-30 minutes to cook fully, so keep an eye on it so it doesn’t burn. Once you take it out and it’s cooled off, pour in some maple syrup and toss to coat.

Thanks for this recipe! Quick question- would you bake this today for both day meals or prepare today don't bake it and leave in the oven overnight on 200? If I bake it today I can bake on 400 but then will it taste good rewarmed?

I haven’t tried cooking them overnight because I usually make them for shabbos. I cook them in advance and rewarm on the hot plate before shabbos and they taste good.

I make it before and reheat it (I didn’t look at the recipe, but I’m sure it’s similar)

Any way for you to microwave the potatoes for very short just to get the cooking started but not really cooked before YT. Then bake at 200 in the morning.

Thank you all who responded! I made it and it looks and tastes YUM! I'll reheat tomorrow iyh I'm planning on keeping my oven on 200. A gut YT to all!!
