Well right now I'm starting with my coffee. I still have to run to the store at the pharmacy and do quite a bit of cooking so I'm a little bit overwhelmed but I'm going to treat myself to a coffee and then davening. I've learned if I don't take care of myself first that everything else will take 10 times longer. So I even let myself sleep in a little bit even though I have lots and lots to do. Somehow it all gets done I have some homemade challah left in the freezer but I don't know if it's enough so I'm going to buy a couple more instead of making another batch which is what I used to do. I'm getting wiser in my older age.

cleaning, laundry, bake challos, iron white tichel and fixed kid dress, some more cleaning, showers-baths, maybe find some time to blow dry-iron daughters hair, some cooking...
and of course continuously caring for my yummy kids B"H

Wash linen and clean up guest room Put out towels and clean up guest bathroom
2 more loads laundry
Iron some white shirts and DD’s outfit
Straighten up my bedroom- hang up some clothing
Cook:
fish
String beans
Steamed broccoli
Noodles for soup
Sautée veggies for a new recipe
Slice meat
Make salads:
Hearts of palm
Chinese cabbage salad
Cucumber salad
Dressing for another salad I will make fresh
Take prepared food out of freezer to heat up or put in fridge
Fill up urn
Fill up water pitchers from my filtered water
Prepare simanin
Go out to seamstress to pick up new suit pants
Go to takeout store to pick up platter I ordered for DS’s Yeshiva
Make sure kids shower and clean up their rooms
I think that’s it

There's obviously more than one so I didn't vote.
Ok I voted more cooking and baking
But I also have to do the washing, and clean the house. My cleaner doesn't come on Sundays. Kids need baths/showers, they need lunch when they get home from school etc etc

Find my daughter's shabbos shoes that did a disappearing act yesterday!!!
Pick up my minipill refill from the pharmacy
Hug and say goodbye to my oldest son who is going away for yomtov
Make sure my kids made up the guest room properly
Defrost and arrange frozen pans into the fridge in order of meals
Put up the fish, soup, salads, potato kugels.
My son will hopefully make a batch of rugelach.
Regular erev shabbos cleaning (silver is already polished, linens already changed)
Debating making another batch of challah just in case
One more load of laundry which I have a feeling will turn into two.
Obvious things like showers, getting everyone into new clothing, setting the table and getting more tables/chairs out for guests.
Make sure I have no muktzah in the stroller.
I should get up and get going!

Same as all of you, I guess
Some cooking,
Cleaning bathrooms, floors stayed clean(ish) so we're leaving them as is, unless I'm super bored later
Bathing/ showering everyone
Cleaning bedrooms
Some last minute grocery items, which I always manage to need, no matter how many grocery runs were already done.
That's it, for now, I'm sure I'll come up with more later!

Where's the option for going to work?
Work half day in the morning.
Pick up a few last minute items on the way home.
Straighten up the house - it's still mostly clean from Shabbos.
Make cake and prepare salads.
Clean kitchen. Again.
Set multiple alarms to wake up at 5:00am tomorrow.
Organize the table being set.
Organize mass showers, and new clothes where relevant.
Try to get half an hour to sit down with a Sefer.
Chesbon haNefesh.
Teshuva
Light candles and shul!
But OP, there is no rule about what you 'should' be doing erev Yom Tov. Every family develops their own habits based in the age of the children and what works for them. I have a friend who prefers to do all the preparation herself, and her husbands job is to take the children to the park for a few hours so no one is in her way. I know someone who makes sure there is an hour for a family photo shoot. As long as you reach candle lighting ready for Yom Tov, you organize the day how you want.
ETA I forgot to add that the whole day will be interspersed with phone calls to from extended family and friends to wish them a Shana Tovah. Hopefully I won't have to answer too many of them.

Cooking:
Potato Kugel

Started the day by throwing a few things into the oven and then putting away clean shabbos dishes. Then gave little kids breakfast and got them dressed. Next on the agenda is get myself dressed, scrub and soak some laundry that got stained. Throw a load in. Take 2 kids to therapy appointments, stopping at the grocery store on the way home for last minute shopping. When I get home I need to do another 1-2 loads of laundry, more cooking, clean up the house, give little kids showers/get older ones to shower. Need to remember to take out frozen food needed for tomorrow day/night, set timers, put up hot water.... I'm sure I'm forgetting some stuff.

Have a lot of coffee. Going to my Sunday job.
Come home at 1:00 and make challah, chicken, desserts, and maybe a few other things. Fall on my face because my daughter who is in seminary called me a number of times from 3 o’clock in the morning and on. Prepare a chicken stew and matza balls that will sit in the crockpot until lunch tomorrow. Try my best to keep it together and be kind and understanding to myself if I lose it. Work very hard on maintaining shalom bayis because usually this is the day that it’s tested the most just due to so many things going on and of course because the yetzer hara is working overtime today.
