I offered to bring a single friend a weekday meal. If I baked chicken with vegetables, and made rice, is it enough?
Should I add a salad or some fruit?

I would add a fruit and even a bit of salad without dressing - dressing on the side. Even if she doesn’t eat it all in one meal the fruit makes a good snack and the salad also will last without dressing and she could have to supplement a sandwich or even some soup she heats up.

It's certainly enough. However, someone who needs a meal train probably doesn't have the energy for more labor intensive foods like salads and cut fruit, so it's nice to include those.
