Hi, I always enjoy the vegetable side dish at weddings with the sugar snap peas and zucchini and carrots but I can't figure out how they make it. It's not roasted. Anyone can help? I want to make it for Yom tov.

I love to make snow peas or snap peas and julienned carrots (cut into matchsticks). It's a super fast stir fry. Basically just stir fry with olive oil for 3 minutes until heated through but still crunchy. Season with kosher salt. I can eat up an entire pan in just minutes.

Yes. The zucchini needs 5 minutes so you can start with those and add the rest after a few minutes.

That’s funny
I was going to say put the zucchini last so it doesn’t get mushy
I guess it depends how you like it op
At weddings it’s sometimes all very soft
If you like it that way put it in the oven covered for 15 minutes before you serve
If you don’t want the vegetables soft, stir fry each separately to the desired degree of doneness, then combine them all at the end
Besides the salt I’d add a dash of ground black pepper and a garlic cube
