This is not as good as the Maida Heatter 62nd Street Lemon Bundt Cake but it was insanely easy and no one declined to eat it out of food snobbery.
I have a cookbook of doctored cake mis concoctions and I might try some others. These are insanely easy and cheaper for sure than a bakery cake. 🤷♀️🤷♀️
Cake Mix Lemon Pound Cake

Ingredients
• 4 eggs
• 18 oz. box yellow cake mix
• 4 serving size pkg. instant lemon pudding mix
• 3/4 cup water
• 1/3 cup vegetable oil
• 2 cups powdered sugar
• 1/3 cup lemon juice
Directions
1. Preheat the oven to 350°. In a mixing bowl, add the eggs. Using a mixer on medium speed, beat for 4 minutes. Add the cake mix, dry lemon pudding mix, water and vegetable oil. Beat for 8 minutes.
2. Spoon the batter into a 10" ungreased tube pan with removable bottom. Bake for 50 minutes or until a toothpick inserted in the center of the cake comes out clean. Remove the cake from the oven. Run a knife around the sides of the cake to loosen the cake from the pan. Remove the sides from the cake leaving the bottom part of the pan attached.
3. In a small sauce pan over medium heat, add the powdered sugar and lemon juice. Stir constantly and bring the glaze to a boil. Remove the pan from the heat. Using a fork, poke holes in the cake. Drizzle the hot glaze over the cake. Cool the cake completely before serving.
4. You can use virtually any flavor pudding mix instead of the lemon pudding mix. For chocolate pound cake, substitute chocolate pudding for the lemon and 1/3 cup melted chocolate for the lemon juice in the glaze. If using other flavor pudding mixes, omit the glaze or use your favorite powdered sugar glaze.
