I have a small jar of duck fat that I bought for a recipe--small glass jar, with a vacuum seal that has a "use or freeze by" date that I'm well past. It was expensive and won't be so simple to replace where I live so I'd rather not "just throw it out" before asking how meaningful this date is. I mean most sealed jarred items have a fairly long shelf-life and it has been in the fridge since I bought it, I just never ended up making what I had originally intended but was going to try to make it for y"t. How likely is it to be rancid?

If its like shmaltz its supposed to last for a long time. I remember hearing people who used to put it away from year to year for pesach.
