Why are my spelt challos falling?

They rise nicely the first time. I don't let it rise too long the 2nd time, but by the time it's baking the shape is almost completely gone.
How can I fix this?

I don't rise a second time at all, then once braided I let rise for 30 min & then place in cold oven then turn on the oven

3 tbsp dry yeast for 5lb flour

I also only do once for an hr max.
Then bake on 350 not preheated for another hour

My Spelt Challahs were MUCH more crumbly and heavier than usual. Even the color was different than usual.

What flour did you use?

I used "Wonder" White Spelt flour. Maybe the flour was the issue?

Love the Wonder mills white spelt. The trick w spelt is not to kneed the dough, rather mix just till the dough is smooth. Spelt does not have the same gluten as wheat and does not bind the same. I braid mine and then let it rise I just find it easier. Do not let it rise twice and not for too long

Yes I usually use Wonder. This time I used Rorie and it also was heavy and fell. I've never had this problem in the past. Maybe it is the flour...
