Do you know what species scientific name of plant the one we use is called? I want to look up care instructions. I am thinking of putting some in the garden for next year.

I’d think you’d be better off asking for care instructions the old fashioned way, through Frum word of mouth. I’m pretty sure to most of the world it’s just a weed

I know it's willow, but I don't know the scientific name. We planted some and never touched it or watered it, and it grew very big.

That is my kind of concern. A lot of word of mouth says it grew wildly out of control, too big, too much spread.

Yes willow trees tend to grow a lot.
I think halachically in order to use it for arovos it needs to grow next water or something like that and you can’t take from your own property. It needs to be hefker or something like that.
Ask a rav.
